If you’re in need of a tasty fix for lunch, The Food Truck 692 in Delap is a great choice. A small team of ladies turn out fabulous food Monday to Saturday from 10:30am to 6pm. The Story Behind the Menu
Lani wrote on Monday: "I LOVE DOLLY! I grew up listening to Dolly and Kenny Rogers. 'Islands in the Stream' was a very popular song here during my teenage years. My tough breakdancing friends (boys) would lip sync to it when we would hang out. I even have it on video so they can't deny that, lol."
The song "Coat of Many Colors" has also made it onto the Food Truck's Dolly Parton Tribute Menu: "It's one of my favorite songs as I can relate, as I was also bullied in middle school in both Majuro and Wisconsin. The reason I named the rolls after that song is because when you open the bowl, there are so many beautiful colors."
These are all summer rolls, Lani wrote: "They are mostly vegetables with either chicken or fish. I decided not to add noodles as I noticed a few of my customers are watching their carb intake. It's like a salad in a roll."
Reflecting on Dolly's life, Lani said: "She grew up poor with a lot of faith in God, which kept her humble in her life. She never forgot her roots, which is why she was so generous and kind."
A couple of years ago, Lani attended a big family reunion in East Tennessee, Dolly's birthplace. "The people there are so nice, genuine, and kind. Now I understand that phrase 'southern hospitality' … it came from Tennessee!"
